Estimation of the distribution of droplet size, interfacial area and volume in emulsions

A two-parameter equation to reproduce the droplet size distribution (DSD) of emulsions has been developed. The equation has been applied atisfactorily to oil-in-water (O/W) emulsions with triolein and tributyrin as oil phase and gum arabic, an alkylpolyglucoside and a fatty ethoxilated lcohol as emulsifier agents. Emulsions with aging effect also have been studied. The equation reproduces satisfactorily the DSD obtained using wo parameters, n and m. This equation enables to determine the distribution of the interfacial area and the oil volume in the emulsions prepared. he equation is suitable too to model the experimental results reported by different researchers. 2006 Published by Elsevier B.V.
